EASY & DELICIOUS SOFRITO RECIPES
Jenny's Sofrito makes ordinary meals extraordinary!

Jenny's Sofrito is a condiment that just keeps adding flavor to everything you cook.
Here are some of our own favorite recipes for your to try. Once you get accustomed to using
Sofrito just try adding a teaspoon or a tablespoon to your own favorite recipes. Sofrito Bonito!

What A Dip!
Now here is a simple and delicious dip you can use with chips, or with quesadillas, tacos,
fahitas, enchilatas and more...

1 pint container of Sour Cream or Yogurt or Cream Cheese
3-4 Tablespoons (or to taste) Jenny's Sofrito (mild or hot)  
Mix together (can use immediately or for best flavor chill 1/2 hr.)
Serve with chips, crackers or our Quesadillas

Sofrito Marinated Chicken
3 chicken breasts cubed (about 1")
3 Tablespoons Jenny's Sofrito Salsa Verde
juice of 1/2 lemon or lime


Toss Sofrito and chicken together and marinate in refrigerator 4 hours or overnight. 
Place marinated chicken into crockpot on High and cook until soft (overnight). 
Serve over rice or as a filling for Quesadillas or in sandwiches. 

Sofrito Quesadillas
1-2 teaspoons Jenny's Sofrito
1-2 Tablespoons Shredded Sharp Cheddar Cheese
Plain Flour Torillas (Burrito Style)
*(OPTIONAL) Chicken, Bean Egg, Pork, Beef, Vegies or Whatever


Heat grill or pan.  Place tortillas on grill cook about 1 minute and spread Sofrito
over tortilla, sprinkle with shredded cheese and optional toppings if desired.  Fold
tortilla and cook until cheese melts about 1 minute. 
To serve as appetizer cut quesadilla in 1 inch strips and dip in Jenny's Party Dip. 

Jenny's 3 Bean Salad
Drain and rinse well 1 can each of Garbanzo, and Red Kidney Beans.
1/2 steamed fresh green beans (or you can use 1 can green beans)
1 Small onion sliced thin
1 Ripe Tomato diced
1 Mango diced
1/2 Cup Jenny's Vinaigrette Dressing

Toss all ingredients well and chill 1/2 hour.

Jenny's Vinaigrette Dressing
1/2 cup virgin olive oil
1/4 cup balsamic vinegar
1-2 teaspoons Jenny's Sofrito
*optional 1/2 teaspoon salt or 1 Tablespoon grated Romano cheese

Mix all ingredients together and shake well before serving.

Our Favorite Meatloaf
Now Meatloaf doesn't get better than this!

2 lbs. ground beef
2 eggs beaten
1 cup rolled oats
1/4 cup Jenny's Sofrito
1/2 cup shredded carrots
1/2 cup catsup

FOR THE SAUCE
1/2 cup catsup
2 Tablespoons brown sugar (optional)
1 Tablespoon mustard
2 Tablespoons Jenny's Sofrito


Preheat oven to 350 degrees F. and grease a 9x5 inch loaf pan. 
In a large bowl combine beef and all ingredients for the meatloaf
and mix well.  In a small bowl whisk sauce ingredients together
and spread on top and sides of meatloaf.  Bake for 90 minutes or
until te inside temperature reaches 160 degrees F.  Serve with
mashed potatoes and gravy, green beans and an ice cold beer. 

Jenny's Black Beans and Rice
2 cups cooked black beans or 1 can black beans
2-3 Tablespoons Jenny's Sofrito
1/2 cup diced or crushed tomatoes
2 cloves garlic crushed
1/2 small onion diced
1 Tablespoon olive oil
2 cups rice (white or brown)
4 cups water
a few grains saffron or 1/2 teaspoon tumeric (OPTIONAL)


Boil water and add rice simmer and cook until fluffy or according to directions on rice package. 
While rice is cooking saute garlic and onion in olive oil when golden add Sofrito, beans
(include liquid) and tomatoes and simmer for 5 minutes.  Serve beans over rice and add toppings
of shredded cheese and Jenny's Sour Cream Dip (see Sofrito Party Dip). 
Enjoy with a fresh green salad and an ice cold beer. 

Jenny's Creamy Guacamole Dip
1 ripe Avocado
1 teaspoon Jenny's Sofrito
1 clove garlic
juice of 1/2 lime
1-2 Tablespoons sour cream or yogurt


Put all ingredients in food processor or blender and blend until creamy. 

Jenny's Pasta with Sofrito, Garlic and Oil
1/2 cup virgin olive oil
7-8 fresh garlic cloves crushed
1-2 Tablespoons Jenny's Sofrito Salsa Verde
1/4 cup grated Pecorino Romano Cheese
1/2 lb. thin spagetti or your favorite pasta


Cook pasta al dente and drain.  While pasta is cooking saute
garlic and oil until golden.  Add sofrito to garlic and
stir together  Pour garlic mixture over pasta, add cheese,
toss and enjoy with a fresh green salad, a loaf of fresh crusty
bread and a glass of your favorite wine.  Moy Bien!

Grilled Swordfish in Sofrito
1 lb. swordfish steak
4 Tablespoons Jenny's Sofrito
2 Tablespoons softened butter
1 lime
Olive oil


Prepare grill.  In a small bowl mix together sofrito salsa verde, butter and juice
of 1/2 lime. Brush swordfish on both sides with mixture.  Grill swordfish with oiled rack
set 5-6 inches over glowing coals until just cooked through about 3-4 minutes on each side.
Top each swordfish steak with a dollop of sofrito Butter mixture and serve with lemon wedge and
grilled red onions.  grilled onion: 1 large red onion cut into 4 half inch
thick slices, mix with 1 tablespoon sofrito and grill until brown and tender
about 2-3 minutes on each side. 

Grilled Lobster with Sofrito Butter
[Lobsters are first parboiled, then finished on the grill for a special treat!]

Two 1-1/2 pound lobsters
1/2 cup (1 stick) Butter
2 Tablespoons Jenny's Sofrito Salsa Verde (mild or hot)
1 Tablespoon fresh squeezed lime juice


Boil lobsters until done (about 10 minutes), remove lobsters and let cool. 
Heat Grill to medium. Sofrito Butter: In a 1 qt. saucepan, heat butter,
sofrito and lime juice over low heat for 5 minutes or until butter melts. 
When lobsters are cool to the touch cut in half lengthwise and brush cut side
with sofrito butter and place lobsters cut side down on grill about 4 inches
from heat source.  Cook 5 minutes.  Carefully turn lobsters over, brush with
sofrito butter and continue grilling until lobster meat is cooked through--
about 5 minutes longer.  Serve lobsters with lemon wedge and sofrito butter. 
Wonderful with fresh corn on the cob, garlic bread, caesar salad and an ice cold beer or a
glass of your favorite white wine. 

Corn on the Cob with Sofrito Butter
4 ears of fresh corn on the cob

1 stick butter
1 teaspoon Jenny's Sofrito

Steam corn until cooked tender.  Melt stick of butter and mix in the sofrito brush corn with sofrito butter.  Bonito Sofrito! 

Goat Cheese With Sofrito Appetizer
1 Round of plain or black peppercorn goat cheese
3-4 Tablespoons Jenny's Sofrito Salsa Verde
1 bunch green and/or red grapes or any of your favorite fruit (optional)
1 box of your favorite soda crackers


So simple but so delicious... Place round of goat cheese in attractive platter
put sofrito on top of cheese and arrange grapes around cheese. 
Arrange crackers around fruit and serve as an appetizer with your favorite wine. 

Popcorn Sofrito
1/4 cup popcorn
1 stick butter
1 teaspoon Jenny's Sofrito
2 Tablespoons Grated Pecorino Romano Cheese


Pop corn in air popper. Melt stick of butter and sofrito and cheese pour over popcorn and toss. 
Makes a healthy but tasty snack.
